PDO

PDO means Protected Designation of Origin. This offers protection under EU law for genuine West Country farmhouse cheddar cheese much the same way as appellation controllee does for wine. This cheese must produced using milk from family or local farms in Somerset, Dorset, Devon or Cornwall. It must also be made using the traditional techniques used on farms since the 15th century which include the famous cheddaring process where the curds are turned and stacked by hand on top of each other.
